The meal takes thirty minutes. That is not a flaw. That is the point.

At Harakama, every pot is cooked from scratch — Niigata Shinnosuke rice in a hand-thrown Banko-yaki vessel from Mie Prefecture, over a low flame, with dashi made by a family in Hiroshima.

You cannot rush it. You can only wait, and taste.
